Graham Cracker Crust:
11 graham crackers, crushed into crumbs
1/4 cup sugar
6 tablespoons butter, melted
Preheat the oven to bake at 350 F. Place the graham cracker crumbs and sugar in a medium bowl. Add the melted butter and stir to combine until everything is moist. Transfer to a 9" tart dish or pie plate and press into the bottom and up the sides in an even layer with the bottom of a measuring cup. Place the tart into the oven and bake for 10-12 minutes or until set. Cool completely before proceeding with recipe.
Strawberries and Sour Cream:
1-1/2 cups heavy whipping cream
1/2 cup sour cream
1 cup powdered sugar
1 teaspoon vanilla extract
2 pints of strawberries, cut in half or sliced
Place the whipping cream and powdered sugar in a large bowl or bowl of a stand mixer and whip on medium speed until soft peaks form. Add the vanilla and sour cream and mix again quickly, just to combine. Scrap the cream into the cooled graham cracker crust and smooth with a spatula. Spread the strawberries over the top and cover and refrigerate or serve immediately.
