Saffron and Ginger Poached Apples with Yogurt and Granola

Ingredients:


1 cup sugar

pinch of saffron

1 whole star anise

1" knob ginger, peeled

2 firm apples, chopped into 1" pieces

1/4 cup crystallized ginger, roughly chopped

Plain or Vanilla Yogurt

Store Bought or Homemade Granola, I like Bob's Red Mill Maple and Sea Salt Granola

Honey, optional


Directions:


In a small saucepan over medium-high heat combine 1 cup of water, the sugar, saffron, star anise and ginger. Bring to a simmer and stir to disolve the sugar. Stir the apples into the liquid in the pan, bring back to a simmer and then turn off the heat. Cover the pan with a tight fitting lid and let sit for 40 minutes.

Drain the apples and move them to a bowl. Stir the crystallized ginger into the apples.

Place a serving of yogurt in a bowl, add granola and some of the poached apples. Drizzle with honey if desired and serve.

Poached apples will keep in the refrigerator for 1 week.
