Queso Dip with Chorizo



Ingredients: 8 oz ground chorizo

3 green onions, thinly sliced

2 tablespoons cilantro, roughly chopped

4 oz can diced green chiles, drained

1/2 cup whole milk

1 pound freshly grated Mexican Blend cheese, Chihuahua cheese or Monterey Jack cheese

Tortilla chips for serving


Heat a medium cast iron pan or other oven safe pan over medium high heat. Cook the chorizo, breaking it into small pieces as it cooks, until browned and cooked through. Turn off the heat and add the green onion, cilantro and chiles. Stir to combine.

Heat the broiler on your oven.

Stir in the milk and then add the cheese, stir to combine everything in the pan.

Move the pan to the oven and broil until melted and bubbling, 3-4 minutes. Keep a close eye as it can easily start to burn.

Serve immediately while hot with tortilla chips on the side.
