Ginger-Soy Halibut with Scallions and Golden Raisins

Serves 2-4

1 lb halibut, sliced into 2-4 fillets
1/4 cup soy sauce
2 teaspoons fish sauce
2 tablespoons rice wine vinegar
1 teaspoon chili paste
1 teaspoon sesame oil
1 teaspoon ginger, minced
1 clove garlic, minced
1/4 cup golden raisins
1/4 cup scallions, thinly sliced
sesame seeds for serving
Preheat the oven to 400 F.
In a small bowl mix together the soy sauce, fish sauce, rice wine vinegar, chili paste, sesame oil, ginger and garlic. Stir in the golden raisins and half of the scallions (reserve the rest for garnish).
Place the halibut fillets in a baking dish that is large enough to fit them in a single layer, I used an 8x8 glass baking dish. Pour the soy sauce mixture evenly over the top of the fillets. Move the baking dish into the oven and bake for 12-14 minutes or until the fish easily flakes off when pushed with a knife or fork and is cooked through.
Move the fish to a serving plate and pour the remaining sauce in the pan over the top. Finish with the reserved scallions and sesame seeds. Serve immediately with rice or sautéed greens.
